ROSES’ FISH “SUQUET” Roses’ cultural wealth is also found at the table. As dynamic as the town, the local cuisine has experienced a series of changes and evolutions. The town’s traditional fishermen created a recipe based on a combination of fresh products. In coves or at home "Suquet" was cooked, a simple dish of freshly caught fish boiled with potatoes. Over time, this homemade recipe has been enriched with the incorporation of typically Mediterranean products, giving rise to different versions of this dish. The restaurants taking part in the “Suquet de Peix de Roses” campaign present various versions of this traditional fisherman’s dish, as well as offering a wide range of wines from the Empordà region.

We should bear in mind that these wetlands are part of those which, when the Greeks disembarked at Empúries, occupied the entire plain of the Bay of Roses and of the Lower Ter, the marshland area between the Muga and the Fluvià rivers, with a surface area of 4783.5 hectares, divided into 9 municipal areas and organised in two zones to the north and south of the River Muga.

The visit should be organised with the thrill of discovering this place and being careful not to alter the spirit of conservation and protection which has inspired the creation of this natural park. Visits may take place from one hour before sunrise up to one hour after sunset. The best times to observe some of the more than 300 species of birds are in the morning and at dusk, and the best times of year are from March to May and from August to October, which is when the migrations take place.

We shouldn't forget to visit the Senillosa observatory, following the Massona itinerary. In 1959 four towers were built to store and dry the rice and one of them was fitted out in 1996 as a privileged observatory 22 metres high from where you can enjoy a really exceptional panoramic view.

In this natural park you will discover a great variety of animal species and a rich vegetation thanks to the contrasts derived from its proximity to the sea: moorhens, coots and storks live side by side with all types of insects, frogs, badgers, rabbits, weasels and even otters and in winter some wild boar, in an area dominated by water and vegetation.
