
ROSES’ FISH “SUQUET” Roses’ cultural wealth is also found at the table. As dynamic as the town, the local cuisine has experienced a series of changes and evolutions. The town’s traditional fishermen created a recipe based on a combination of fresh products. In coves or at home "Suquet" was cooked, a simple dish of freshly caught fish boiled with potatoes. Over time, this homemade recipe has been enriched with the incorporation of typically Mediterranean products, giving rise to different versions of this dish. The restaurants taking part in the “Suquet de Peix de Roses” campaign present various versions of this traditional fisherman’s dish, as well as offering a wide range of wines from the Empordà region.

L'Escala harbours one of the oldest and most traditional industries, inherited from our ancestors, the Greeks of Empúries. Anchovy salting is a home-made product, a natural product and carries the name of its origin.
In the old part of the town, there is the parish church of Sant Pere de l'Escala and a few narrow side streets which still have some beautiful houses from the 18th and the 19th centuries and in the midst of the houses that stand out is the house where Victor Català was born and where he died (pseudonym of the writer Caterina Albert i Paradís).
Empúries fou fundada cap al 575 a. C. pels grecs de Fecea,que,per raons de seguretat,inicialment s'establiren en un illot,que fou anomenat Paleòpolis o ciutat vella,i que es localitza on avui-unit ja l'illot a terra ferma,a l'anomenada Neàpolis o ciutat nova-es troben les ruïnes d'Empúries.
Els grecs l'anomenaren Empòrium,és a dir,mercat,i fou una atractiva factoria comercial.
