ROSES’ FISH “SUQUET” Roses’ cultural wealth is also found at the table. As dynamic as the town, the local cuisine has experienced a series of changes and evolutions. The town’s traditional fishermen created a recipe based on a combination of fresh products. In coves or at home "Suquet" was cooked, a simple dish of freshly caught fish boiled with potatoes. Over time, this homemade recipe has been enriched with the incorporation of typically Mediterranean products, giving rise to different versions of this dish. The restaurants taking part in the “Suquet de Peix de Roses” campaign present various versions of this traditional fisherman’s dish, as well as offering a wide range of wines from the Empordà region.

CASTELLÓ D' EMPÚRIES
In the past, Castelló d'Empúries was the capital of the earldom of Empúries. It is a town of great agricultural, stock-breeding and touristic importance.
The parish church Santa Maria, that count Pere 1st tried to convert into a cathedral, conserves its square bell tower which is 69 metres high; the main part of the cathedral has three large naves. This magnificent church is Gothic, but it has a Roman bell tower. At the main altar, you will find a fantastic alabaster altar-piece by Beuda. The porch is emphasised, in white marble, with a beautiful decoration. The old building of the Llotja, in the Catalan-Gothic style, is currently occupied by the town hall.
The "cúria-presó" is a fantastic example of the civil Gothic-Catalan style (The cúria is a place where people were judged and presó means prison). The cúria building will be used in the future as the historic registry head office of Castelló and as the historic museum of the small town.
The flour mill in Castelló d'Empúries has begun a new stage as an "ecomuseum".
As for nature, one can walk through the Museu de les Papallones, (The Butterfly Museum). It is an "open-air" museum, where one can contemplate the wonderful world of tropical butterflies.
Also belonging to Castelló d'Empúries is the modern urbanisation Empuriabrava and the Parc Natural dels Aiguamolls de l'Empordà.
