ROSES’ FISH “SUQUET” Roses’ cultural wealth is also found at the table. As dynamic as the town, the local cuisine has experienced a series of changes and evolutions. The town’s traditional fishermen created a recipe based on a combination of fresh products. In coves or at home "Suquet" was cooked, a simple dish of freshly caught fish boiled with potatoes. Over time, this homemade recipe has been enriched with the incorporation of typically Mediterranean products, giving rise to different versions of this dish. The restaurants taking part in the “Suquet de Peix de Roses” campaign present various versions of this traditional fisherman’s dish, as well as offering a wide range of wines from the Empordà region.

Around the year 500 BC, a group of natives of the Iberian tribe built what would be the first walled village of Peralada.
Later, in the 9th Century, Peralada became the centre of a county in the Carolingian empire, and throughout the Middle Ages it was one of the main capitals of the Empordà.
Many buildings and monuments date from this period of splendour and offer a delightful setting for visitors, inviting them to discover the secrets of a thousand-year-old village around every corner.

THE CLOISTER OF SANT DOMÈNEC-MEDIEVAL VILLAGE MUSEUM
This Romanesque monument dating from the 12th Century is the only part which remains of the Augustinian monastery founded in the second half of the 11th Century. The grounds of this cloister have recently become the site of the municipal Medieval Village Museum with its modern exhibition system, where the main events of the history of Peralada are explained in an easy-to-understand and interactive way.

THE CHURCH OF SANT MARTÍ
The present building of the church of Sant Martí dates from the 18th Century , although the early church, which archaeologists have discovered, would date from the beginning of the 9th Century. Worth special mention is the monumental size of the Gothic bell-tower, which is the result of an unfinished construction made in the 14th Century. Inside is the Parish treasure and the most important piece, the processional cross of gilt silver made in Perpignan in the 14th Century.

THE LIVE NATIVITY SCENE
The live nativity scene has become one of the most deeply-rooted traditional events with full participation of the people of the village. The nativity scenes are enacted over the Christmas Holiday period, in the beautiful setting of the Castle gardens
