ROSES’ FISH “SUQUET” Roses’ cultural wealth is also found at the table. As dynamic as the town, the local cuisine has experienced a series of changes and evolutions. The town’s traditional fishermen created a recipe based on a combination of fresh products. In coves or at home "Suquet" was cooked, a simple dish of freshly caught fish boiled with potatoes. Over time, this homemade recipe has been enriched with the incorporation of typically Mediterranean products, giving rise to different versions of this dish. The restaurants taking part in the “Suquet de Peix de Roses” campaign present various versions of this traditional fisherman’s dish, as well as offering a wide range of wines from the Empordà region.

Villages that preserve their medieval essence: the castle, the keep and the main square.

Probably located on some old stone quarry, from which it might have taken up the name, it is worth walking quite a long time along its streets to find a medieval site of great interest.

With the tower of the Castle as the centre, the village is formed by many streets of irregular shapes which was surrounded by a complex wall system. In the North and West the defensive ditches carved in the rock are spectacular.

Outside the walls there is the Romanic church which is consecrated to Saint Steven.
